What is a kebab?

Kebab (also transliterated as kabab, kabob, kibob, kebhav, kephav) refers to a variety of meat dishes in Middle Eastern, Mediterranean, African, Central Asian, and South Asian cuisines, consisting of grilled or broiled meats on a skewer or stick. The most common kebabs include lamb and beef, although others use goat, chicken, fish, or shellfish. (Source: Wikipedia)

So what really goes into a kebab?

1 kg mutton mince (rinse and drain)
1 large onion grated (remove excess water)
3 green chillies
8 cloves garlic
1 tsp ground red chillie
½ tsp black pepper
2 tsp salt
2tsp dhuna jeera
½ tsp tumeric
3 Tblspn ground almonds
4 slices bread (soaked in water)
Dhunia (washed and chopped)

Liquidize the bread, garlic cloves, green chillies, almonds and spices.
Mix this together with the mince and onions then add the chopped dhunia.
Form balls, can be frozen at this stage.

Cooking the kebabs

•    Put about a tblspn of ghee (clarified butter) into a pot and place the kebabs in, start cooking on a high heat
and reduce to low for about 10 minutes, serve with garlic butter pitas
•    Make a tomato chutney and place your kebabs in and leave to cook for about 15 minutes, serve with roti.
•    fry onions in ghee and spoon this over the kebabs, serve with garlic pitas and hummus
•    dry roast some sunflower seeds, sesame seeds and almonds then dip the kebabs in after they have been cooked
and serve with roti or pitas.
