strawberry panna cotta

I put a strawberry spin on my favourite panna cotta recipe from Nestlé.
- 380g evaporated milk
- 40g sugar
- splash of strawberry essence
Warm all of the above until it’s almost at the boil.
- 3 teaspoons gelatine
- 2 tablespoons water
Nuke the gelatine and water few seconds in the microwave. Do not allow the mixture to boil.
- Around 12 strawberries (it’s your call on this)
Slice and dredge the strawberries with a bit of sugar.
Stir the prepared gelatine into the milk mixture until it’s dissolved. Add the sliced strawberries.
Pour into prepared moulds and chill to set.
Makes ten small servings.
